When I was pregnant I craved greek salad.

I had a bowl of greek salad every single day for a good five months. Now this was a bit bizarre because although I love it, I'd never made greek salad myself. It was a favourite to order once in a while at a restaurant but that's it. Once my son was born, the craving vanished and I didn't make it or order it for almost a year. Now I am getting back into this salad so I thought I would share this super easy recipe I swear by. I love a salad in the summer. Who wants to cook when it's so hot outside? This is also a great option to bring a bbq or a potluck. It's from my friend's mom whose house I frequented growing up. I'm confident she's never made a bad meal!
Super Easy Classic Greek Salad
Cut up into chunks and mix together whatever quantity of the following ingredients:
Roma Tomatoes
Green Pepper
Red Onion
Cucumber
Olives (I'm not a fan of olives so I just add more veggies)
I also like to add celery and mushrooms if I have them on hand
Dressing:
1/2 cup olive oil
2 tbsp lemon juice (I use freshly squeezed)
2 tbsp white wine vinegar
1 tbsp oregano
1 tsp salt (optional)
1 tsp pepper
And that's it! I usually make a huge salad and keep it in the fridge in this container. Then I make the dressing separately and just add it to the salad when I dish out a bowl. This keeps the veggies and feta crisp longer.
I have been doing exactly that this week! Love greek salad! One of my little twists is to BBQ a hot italian sausage, slice it up and toss it in with the salad. (Sausage is done on a per meal basis - not when pre-making the salad.) Beefs it up into more of a meal and spices things up a little. If I'm doing that, I often don't even use dressing because the fat from the sausage kind of does the job. Usually just a little lemon if I'm wanting a little extra zest!
