Turkey Dill Burgers Recipe

Here's a great recipe that's easy, quick and delicious.  Also, I like it because it's a variation of your typical beef burger.  Hope you enjoy!

Turkey Dill Burgers:
(from Company's Coming: Healthy in a Hurry)

1 large egg, fork-beaten
2 pieces of bread, broken into fine crumbs
1 finely chopped dill pickle
2 tsp fresh chopped dill (or 1 tsp dried dill)
1 lb extra-lean ground turkey

Combine ingredients into a bowl, mixing well.  Divide into four equal sized patties.  Fry in a large frying pan over medium heat.  I use a lid to keep the heat in and the patties moist.  Cook
Cook for about 7 minutes per side, until internal temperature reaches 175F.  Or, I just check to make sure they aren't pink inside. 

Using whatever burger buns you prefer, add fixings like lettuce, tomato, cilantro, mustard etc.  

**One side note: If not everyone in your family likes dill, you can leave out the pickle and the seasoning from the patties and add slices of pickle afterwards.

Happy National Coffee Day!

Here I am enjoying the second of what will be many cups of coffee today.  Like the good Canadian I am, drinking out of a Tim Hortons cup.  I don't play favourites though;  I'll hit up the Starbucks drive-thru later today;)
What's your favourite coffee?  I'm splurging on Starbucks Salted Caramel Mochas right now.  Half sweet, non fat, extra espresso shot.   Delish.

Review: Carly Rae Jepsen's Kiss

Carly Rae Jepsen has finally released her first international album, Kiss.  And let me tell you, it will kiss your ears with infectious beats and super fun lyrics!  Carly had help from super producer Max Martin and also Mariana’s Trench’s Josh Ramsay.  (Josh was the mastermind behind Call Me Maybe, taking it from folksy to number one.)  The songs are fun and the lyrics easy to learn with the overall result being pop heaven.  Carly’s voice sounds great on most tracks and her unique sound is able to stand out among what could have been “just another pop record”.  If you liked her previous acoustic sound, you will find none of that on Kiss.  I would have liked maybe one song to pay homage to her roots, but I also love that there aren’t any ballads on this album.  The only songs that slow it down a bit are Your Heart is a Muscle (with a beautiful piano melody) and her duet with Justin Bieber, What Makes You Beautiful

Everyone who I know that’s heard the album absolutely loves it.  I’ve had it pretty much on repeat for the past three days.  Carly is 26 and I think that sets her sound apart from other young pop stars.  Other tracks I like on this album are This Kiss, Tiny Little Bows and Tonight I’m Getting Over You.  If you’re looking for a fun, up-tempo album, this is definitely for you!

Quinoa With Veggies Recipe

In yesterday's video, I talked about making this dish at the beginning of the week and then using it as a side for my lunches.  I love that it's healthy with vegetables and quinoa, flavourful and also filling.  Here's the recipe as promised.  However, I use whatever veggies I have to use up like celery, broccoli, carrots, whatever.  You could even add chicken for some more protein.  Here you go: 

Quinoa with Veggies:
1 cup quinoa
3 cups water
1 red pepper
1/2 cup corn
1/2 tsp cumin
green onion
Bring quinoa and water to boil, simmer for 20 minutes.  Drain and set aside.  Cook garlic, pepper and corn season and add quinoa and green onion.  Serve hot or cold.

Review - The Truth About Love

Oh it's like Christmas in my world!  Pink's finally out with an album filled with new content!  The Truth About Love is Pink's sixth studio album and her first since reconciling with hubby Carey Hart and having her first baby, Willow.  
And girl is back with a vengeance.  
Pink is known for powerful, up-tempo, in-your-face-tracks and she does not disappoint on this record with songs like Are We All We Are and the first single, Blow Me (One Last Kiss).  But also, Pink has an amazing voice with great range which she shows off on tracks like Try and Beam Me Up.  Pink's been a favourite of mine for years and my high expectations are met.  It's refreshing to know Pink is singing her heart out and will do so when these songs are performed live in her upcoming tour, not relying on heavy editing in studio.  Her cheekiness is alive and kicking and some may say she's trying a bit too hard with many of the songs featuring unnecessary curse words.  I've noticed a trend on previous albums of her's: there are radio-friendly tracks, ballads and then some fun songs you know really show her creativity.  Heavy hitters Eminem, Lily Allen and fun. singer Nate Ruess join Pink.  
This album came out Tuesday, along with Carly Rae Jepsen and Nelly Furtado's latest.  Something tells me The Truth About Love will give those two a run for their money!

Nail of the Day

This colour was given to me from a friend who also has a slight nail polish addiction like me:)  Gotta love enabling friends!  It's called Number One Nemesis from the OPI Spiderman collection that came out this summer.  As you can see it's a shimmery, metallic silver.  It's going to be one of my go-to shades for fall and winter.  Wouldn't this just be gorgeous for New Year's Eve?  It was a tad streaky but  with two coats only I can tell by looking really closely.  As you can see it's a mini bottle which I mentioned in my August Favourites video.  I am just loving small bottles lately!  They help me to be more precise in painting my nails.

Chilli Mac Recipe

This is a great recipe to try because it's easy, the ingredients are minimal and it will freeze well into the cooler months.  Also, it's healthy!  This is a recipe I found via Weight Watchers and is only seven points per serving:)  I would recommend adding more spice, depending on your taste.  I also used a lot more tomato juice than it called for and also I added in some fresh roma tomatoes.  

10 2/3 oz uncooked 95% lean ground beef   

2 medium uncooked onions, chopped   

29 oz canned stewed tomatoes, Mexican-style   

2 1/2 cup(s) canned tomato juice   

4 oz canned green chili peppers, diced, drained   

2 tsp chili powder   

1 1/2 serving(s) uncooked macaroni, elbow   

31 oz canned pinto beans, drained and rinsed   

1/4 cup(s) low-fat shredded Cheddar cheese   

Coat a large skillet with cooking spray. Cook ground beef and onion over medium-high heat until meat is browned, about 10 minutes; drain off fat.
Stir in stewed tomatoes including juice, tomato juice, chili peppers and chili powder. Bring mixture to a boil.
Stir in macaroni and beans; return to boiling. Reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Spoon chili into bowls and sprinkle with cheese. Yields about 1 cup of chili and 1 1/2 teaspoons of cheese per serving.

Review - Wet N Wild Palette

I wanted to share this gem of a find.  This is the Comfort Zone palette from Wet n Wild.  As you can see it features eight fairly neutral colours.  Now you may be thinking, "what's the big deal?".  Well, it's some of the nicest shadows I've tried and costs less than five dollars.  FIVE dollars for all eight? Yep!  In fact, I was looking for the trio from Wet n Wild called Walking on Eggshells which I love.  It cost a bit more and then my eyes landed on this bad boy.  Sign me up.  A smaller price tag for five more colours? Yes please!  Also, the top three on the left are very similar to Walking on Eggshells. 
As you can see from these very light swatches, the pigmentation is beautiful.  The colours are smooth and very easy to apply.  I am having fun playing around with different combos and the next time I go out at night I might even try a darker, smokey eye. (Not really appropriate for when I am doing my makeup at 4am for work!)

I just wanted to share this as an option in case you need a great mix of colours to travel with or if you are wanting some inexpensive colours to try.

Review - Ellie Goulding's Lights

This week's album is one that has actually been out for a couple years in the UK.  But, we here in Canada are just learning about Ellie Goulding.  Her first single off this album, Lights, has been in high rotation on our radio station for a few months.  The album is actually titled the same thing: Lights.  
Want to know something funny?  I actually would compare Ellie Goulding to Canadian artist Lights.  The sound is relaxing, unique and pretty.  I actually listened the album from beginning to end and then started it again all the way through.  This never happens!  I usually jump around, skipping songs and get impatient wanting to hear an entire album.  But this album was different.  I've played it a few more times and love having it on in the background while I am working. 
You may recognize Ellie's name because she performed at William and Kate's wedding reception.  Hello famous fans!  She's well on her way to joining countless other artists from the UK burning up the Canadian charts like Jessie J, Tinie Tempah, One Direction, and Adele.

Nail of the Day

This is a beautiful milky, pale purple colour from Essie called Pilates Hottie.  First, I just love the name. Second, this polish is meaningful to me because it was a very generous gift.  Third, this is only one coat.  ONE coat!  I absolutely love finding a colour that only needs one coat.  To cut down the time is a major plus in my always-multi-tasking life.  I've heard that Essie polishes can vary in quality and staying power from colour to colour but this is a winner for sure.  I had it on for five days with very minimal chipping.

Tuesday Questionnaire

1.) Mood: Content:)  I've really been counting my blessings lately and am overwhelmed by just how many there are.  (Wow, cheese much?)

2.) What are you looking forward to most today? Going for a walk with my mum and Thomas once I'm off work.  She's heading south for the winter in just a few weeks so I am trying to soak in as much mum time before that!

3.) Someone is bringing you breakfast in bed, what is on the perfect tray? Hot, strong coffee, fruit and granola.  Oh and if I can ask for anything, fresh flowers:) 

4.) Current nail polish: Essie's Pilates Hottie (NOTD coming this week)

5.) Where do you keep your handbag when you are home? It hangs on a hook with our keys just by the door and coat closet.  

6.) Current outfit:  White top from H&M with three quarter length sleeves that goes to about mid-thigh, vintage brown belt with army green leggings from Joe Fresh and Steve Madden strappy wedges.

7.) If you could try on any celeb's hairstyle for a day, whose would you choose? Maybe Pink, just to feel like a rocker rebel.

8.) Do you sleep with your bedroom door open or closed? Closed to keep the sounds of the house to a minimum.  Remember, I hit the sheets at about eight.  So glamorous!

10.) Weekly goals: I want to call our internet/cable/phone provider and see if I can reduce our channels and up our internet speed.  Also, I have to call the airline we travelled with to Philadelphia to see if they will give us any compensation for our hell-ish travel.  Doesn't all that just sound so fun? ;)  On a more positive note I want to get outside now that the weather isn't so hot!

Make At Least 10 Meals For Under $20

I have discovered a great way to cook ten, healthy meals at an extremely low cost.  I hope you find this helpful as it's quickly becoming a go-to in our house and I think it's perfect heading into the cooler months.

I start by buying one of these pre-cooked chickens from my local grocery store's deli:
As you can see in the photo, this 900 gram chicken cost $8.49.  We really like this chicken as it's flavourful, juicy, fresh and not fried.  I usually discard the skin.  There is so much meat too, which makes this perfect for multiple meals.  Serve this with a side of veggies and maybe a portion of mashed potatoes, rice or quinoa.  

Then on day two, I peel some of the chicken off to create one of our favourite meals, BBQ Chicken Sandwiches:
(This recipe is from one of my Weight Watchers cookbooks.  The points per sandwich are six!)

RECIPE (per sandwich):
1 cup pulled cooked chicken
1/4 cup of your favourite BBQ sauce (or more if you like it saucier;)
chilli powder
paprika (or whatever spice you like)
your favourite type of bun (I use a hamburger bun)

Mix chicken with sauce and spices in a pot over low heat, put on the bun and enjoy!  

I serve this with a salad, whatever veggies are in season or frozen veg.  I actually learned through Weight Watchers that no nutritional value is lost if you eat frozen veggies instead of fresh.  This is fantastic because frozen veggies are such a cost-effective option.  If you find them bland, I like to add some flavour with a little dill or basil or even pepper.  

Then, I take as much of the leftover chicken off the bones and set it aside.  Take the bones and boil in water on low for a few hours to create a stock for soup.  If any meat remains on the bones, it will fall off in the water.  Once you have boiled the bones into submission, discard them and you will be left with a nice start to a broth.  Then I usually add some more chicken broth (can find this for very cheap, like $2) and the leftover chicken in a big pot.  To this I add any vegetables I have that need to be used up like onion, carrot, celery, corn, maybe cabbage, anything.  Also, I like to add quinoa to make this a heartier soup with more substance.  Quinoa is such an amazing addition to any dish.  You can also use rice or noodles.  (If you are going to use noodles, wait until later in the cooking process so they aren't mushy.)  I also add some spices like dill, pepper, celery salt, basil, whatever you desire.  

Voila!  You have soup.  I like to make soup to use up whatever I have in the fridge or cupboards.  I will freeze this in yogurt containers and in each put enough for two servings, that way I can thaw a container for an easy meal. 

In all, with two servings for the first chicken dinner, two sandwiches and then the soup, I can easily get ten meals out of this one chicken, usually more like fourteen.  The cost is minimal as besides the chicken, you just need a couple buns, BBQ sauce, some veggies, stock, quinoa if you like and spice.

Another Collage

You know how much I love to collage.  This week I decided to switch out a huge wedding photo with a collage of various pictures from our day.  It freshened up the space and now catches my eye when I walk by instead of just fading into the wall like it used to.  Changing the pictures you have in frames or re-arranging them is an effective and inexpensive way to spruce up a room:)

Nail of the Day

As you all know, I am a fierce lover of the Revlon Colorstay Base and Top Coats.  Fierce.  They are just the best pair I've found.  But, something that might surprise you is that I'd never thought to try an actual polish from this line.  Duh.  So as I showed in my US Haul Pt 2 video, here is my first foray into the Revlon Colorstay polishes.  This is the colour Bonsai.  I thought it was just a beautiful emerald green that will transition well from summer to fall and into winter.  I can already see it as a great Christmas colour:)  This is two coats and I took this picture on day four of wear.  There is a bit of chipping, but not bad.

Back to School

Here's a great picture of me in second grade, sans my teeth but with some hair-sprayed eighties bangs:)  Even back then you can see one side of my hair flipping under and the other flipping out.  Good times;)  

I thought it would be fun to do a post about back to school.  I haven't been in high school in more than a decade but I still think of this time of year as back to school.  It's a great excuse to have a fresh start.  I've been doing a lot of purging in our house.  Packing up clothes that no longer fit Thomas, cleaning out rooms and drawers and re-arranging our place in general.

Also this time of year I have the strongest urge to shop for school supplies.  (I even tried to convince my 10 year old niece to let me take her:)  There's just something about a pack of pens, a fresh notebook and tools to organize said supplies.

Wow I sound like quite the nerd!

I tweeted yesterday morning about wanting to buy some pencils and erasers and a very smart woman tweeted me back saying every year she feels the same way, buys supplies and then donates them.  Genius!  So I did some digging and in my town a host of organizations are collecting school supplies.  The Salvation Army, the women's shelter, a grocery store and even the local schools.  I wish I had done this before school started, but better late than never right?  

I've heard from a lot of parents who've been counting down until this week, signalling the end of summer and the beginning of some downtime as the kids go back to class.  I am sure one day I will be echoing these sentiments.  

I started grades one, four and five as the new kid as my family moved around quite a bit growing up.  It can be tough being the new kid, but just remember that it gets easier.  Soon you will be rushing around school or campus, forgetting how big it once seemed.  It's been exactly nine years since I started my broadcast journalism program; crazy to think how much has changed since then.  I was quite the nervous small-town girl starting that semester.  But it quickly got easier and it will for you too:)

It's All In the Little Things

Sometimes I like to remind myself to take a moment to really appreciate the little things in life. 

Wow, that sounds ridiculously cheesy.
I took this while on our vacation.  Consider it my 'happy place'.
:)  However cheesy that sounds, it's true.  It's important to acknowledge the small things that can provide a smile or sense of calm to your life.  

If you are having a bad day or something is weighing heavily on your mind, it can be therapeutic to stop and appreciate the little things.  

I decided today to share some of the little things making me happy lately:

- filling up the coffee maker at night so that in the morning fresh coffee is ready at the click of a button

- splurging and buying coffee beans to grind so the coffee is extra fresh and flavourful

- tidying a room that's been messy and bugging me for too long

- preparing a gift for a friend

- spending time with my 10 year old niece before she moves away 

- brainstorming new and exciting ideas for my radio show

- having two weeks off to really clear my head

- playing the new Taylor Swift song on repeat

- crossing things off my to-do list

- purging clothes, shoes and bags I don't need

- making a fall shopping list
