Quinoa With Veggies Recipe

In yesterday's video, I talked about making this dish at the beginning of the week and then using it as a side for my lunches.  I love that it's healthy with vegetables and quinoa, flavourful and also filling.  Here's the recipe as promised.  However, I use whatever veggies I have to use up like celery, broccoli, carrots, whatever.  You could even add chicken for some more protein.  Here you go: 


Quinoa with Veggies:
1 cup quinoa
3 cups water
garlic
1 red pepper
1/2 cup corn
1/2 tsp cumin
oregano
green onion
pepper
Bring quinoa and water to boil, simmer for 20 minutes.  Drain and set aside.  Cook garlic, pepper and corn season and add quinoa and green onion.  Serve hot or cold.
Yum!
