Turkey Leftovers Recipe

Good morning!  Canadian Thanksgiving was last weekend and I don't know about you, but we still have turkey leftovers!  I thought I would share a recipe for leftovers.  You could also substitute the turkey for chicken and make this any time of year, whether you have food to use up or not.  It's very easy and quick.  I made it last night in about 20 minutes.  It's something my mum used to make when I was little and it's just so delish!  Even my husband liked it and he's usually hard to please with new dishes, especially ones with cheese;)

Cheesy Turkey Rotini

3.5 cups of uncooked rotini
2 cups frozen veggies
1 garlic clove
1 can cream of mushroom soup
3/4 cup milk
pepper to taste
2 cups diced turkey

Cook rotini and drain.  Saute garlic and veggies on medium heat for a couple minutes.  Stir in soup and milk.  Add cheese and pepper, heat until cheese melts.  Stir in turkey and drained rotini, heat through.
Makes 4 servings.

I hope you enjoy!  I just love warm, comfort food-type dishes when the weather is changing.

  1. Hi Mare-
This sounds great. Could you tell me what type & how much cheese you used in this recipe?
    Thanks!

  2. Yes! I just sprinkled some mozza on before serving. Maybe a handful? Not too much, just to taste:)
