Vegan Taco Salad

Last Friday I posted this photo of my first attempt at a healthy, vegan taco salad.  I was very pleased with the outcome and had many requests to share how I made it.  Ask and you shall receive, friends!
We've always been big taco lovers but I stopped eating beef last fall and Jeremy hasn't had any for about a month now.  I wanted to try something new and it was yummy, easy and very healthy!

You will need:
lettuce, washed and shredded
juicy tomato, washed and sliced
two cloves of garlic, minced
quarter of a white onion, diced
chickpeas, washed and drained
black beans, washed and drained
taco seasoning (I use the reduced-salt version)
guacamole (I love the Wholy Guacaomole from WalMart, but you can also easily make guac by mashing an avocado and adding some pepper, salt and lemon juice)
tortilla chips

As you can tell, I don't measure much when in the kitchen! I used about half a head of lettuce for two portions, one tomato and about half of each of the cans of beans.  Taco seasoning, maybe a tablespoon or two and then as much salsa and guac as you would like. 
You can also add sour cream or cheese, but I was keeping this as healthy as possible. 

For the "meat" I just browned the onion and garlic in a frying pan and then added the beans and taco seasoning.  These only cook for a few minutes, until they are heated through and seasoned. 
I layered the ingredients and voila! Delicious and easy taco salad. Also fabulous for left overs if you make extra portions.

Hello and Happy Saturday!  I am starting a new feature here on MaresPlace and today is the inaugural post.  I love giving credit where it is due and feel like showing appreciation for the little things in life is incredibly important.  So, Saturdays will now be dedicated to me giving a shout out!  It can be a person, a product, a tv show, an event, a food, anything!  I will be giving a shout out to something/someone that is making my life a little brighter or easier or lighter. Today's Shout Out Saturday goes to Sophie. 
Yes, this little teething toy is still getting love in our house.  You can read another Mama Mare Must Have blog post I wrote two years ago about this lil nugget.  Initially I thought this was on over-produced toy that was just something we all got suckered in to. 
No longer do I think that.  
I LOVE Sophie and the relief she continues to bring Thomas as he gets his molars. He's been teething again for the better part of the month and the biting this toy has endured without so much of a dent is admirable. 
I love Sophie and am thankful for her existence in our home. 
As for the teething...well that could end any time ;)

Nail of the Day

This Nail of the Day is Essie's Truth or Flare.  Essie is quickly becoming one of my favourite formulas. For the most part is it very reliable.  This polish has now been on my nails for a week without a single chip.  It's coming off quite a sky-blue colour in these photos (in natural light) but it's got a definite dusty quality to it, unlike any other polish I have.  I'll admit it: I am cheap when it comes to polish.  This $9 bottle was a bit tough to actually buy, but completely worth it!  I will absolutely be busting this out again on my fingers and definitely my toes.

The above is from a week ago when I finished the Jennifer Weiner book (great chick lit) and started Something Borrowed.  That one made me stay up much too late last night!  A nice, easy bedtime read.
 Getting used to my short hair.  It's funny how much more time I have in the mornings...
 Thomas couldn't wait to dive into this book by Elle and Blair ;)
 We had a quick trip to Vancouver and even though we didn't get in a long visit, I had to stop in and give Emilie a big hug!
 I felt like such an adult buying these flowers to plant.  Would you believe they are still alive?

 We celebrated the long weekend by having our first ice cream of the season!
 I just love a fresh notebook. This Kate Spade one is from Chapters.
 I recently did a huge purge of my nail polish collection and was happy to see my extra bottles go to some happy homes:) I also shot a nail polish organization video which will be up soon!
We took a family trip to our local store for Record Store Day.  I did a video showing which record I bought. I was very excited!

Nail of the Day

Today's Nail of the Day is from the Maybelline Color Show line.  I found this colour at Target last year for less than $3.  You can see the vlog here of Emilie and I hunting for what we thought would be the best dupe for Pantone's Colour of the Year for 2014 which is Radiant Orchid. 
This colour is called Iced Queen.  I am not too familiar with this brand of polish but am incredibly impressed.  The application was very easy and the brush was so small that I was able to paint my nails without getting too much on my skin.  (I am usually a hot mess!) The colour is beautiful and I am loving it for spring and to pair with fun colourful arm candy! You can find this polish at most drug stores, Walmart, Superstore etc. 
Are you liking Radiant Orchid as the colour of the year? I think it will be fun for spring and summer, but come fall and winter...not so much!

MareReads: Barbara Walters

I thought it would be timely for me to share my thoughts on this memoir as Barbara Walters announced Monday she will be officially stepping away from television May 16th.  She will still make appearances as the news warrants, but I mean, the woman is in her 80s...time for a break! 
Audition is a few years old now and it's a hefty read.  If possible, read this on your Kindle, Kobo or iPad!
I didn't grow up watching Barbara Walters and I have never been a huge fan of The View.  But, I still found this book to be a fabulous read, as a woman.  She has overcome so many obstacles and blaring sexism in her career.  Something that wildly struck me was how often I am still hit over the head with similar sexism.  Times may have changed friends, but it's still there and still a battle.  
It's also a time travel trip through decades of our world's biggest events that found Walters dead center.  She's interviewed everyone from celebs to presidents to athletes to everyday people.  She also talks about her personal struggles and the aspects of her unbiased self that we never saw in the news.  (We see a bit more now on The View.)  
If you like pop culture and history and want to hear some behind the scenes tales, this book is for you.  Like I said, I am not even a massive fan and I still really enjoyed it. 
I think she's an institution and she's changed the face of television and news, blazing the trail for women just like myself.

Tips for Drinking Water

I used to hate water.  With a passion.  What do you mean I am supposed to drink this bland, tasteless liquid? Ew ;)
Well, now I would say water is my drink of choice!  Besides coffee in the morning and sometimes a decaf tea, water is what I drink all day.  I have been trying to drink 100 oz (about 3L) of water a day for the past three weeks and have noticed a huge difference in how I feel.  I know that number probably sounds insane, but it's actually easy and completely do-able.
As you can see from the above picture, I like to pack my drinks ahead! (I also despise paying for bottled water and prefer to carry my own.)
  I start every morning with a cup of hot water with lemon.  This combo helps with the condition of my skin, kick-starts my metabolism, keeps the cold/flu away and is just a refreshing start to the day. 
I also love a pretty mug or water bottle.  This might seem simple or irrelevant, but I say, whatever works!  I love my Charlotte Ronson Starbucks mug at work and this 30 Minute Hit water bottle at home: 
I have calculated how many oz the mug and the bottle are, and I like to keep track all day. It's surprisingly easy to drink when the bottle is always with me or the mug is in front of my in the studio.  
Also, as I have been working to drink more water, I notice how often water curbs my appetite.  I know I am not actually hungry, and the water can be very satisfying.
I like to add a little something to my H20 as well, like this picture with fresh mint.  Cucumber, lemon, watermelon, strawberries and lime are also very nice.  Plain water is going to get boring, mix it up!
My skin is clearing up very nicely, I am never bloated and I just feel much more healthy. 
That being said, I must always be near a ladies' room ;)

Jean Shirt: Three Ways

I recently got a jean shirt from Le Cheap C'est Chic after wanting one for a very long time.  I feel like a jean shirt is a very versatile piece to have in your wardrobe.  You can dress it up or down, throw it on over something casual or accessorize it to the max. 
I thought it would be fun to show you three ways I've recently worn this shirt. 
In this first one I tucked it under this fuchsia Ralph Lauren sweater.  This is a much more fall or winter appropriate look.  I paired it with this silver bib Stella and Dot necklace just to add a little more interest at the neck.  I like to have a collar popping out and think these three pieces go great together.  I wore it with a black skirt. 
Then I thought it would be fun to show how I wore this shirt with another pattern.  I like to play around with pattern and texture.  This jean shirt has a subtle snakeskin print to it.  I wore it with these aztec looking black and white pants from Winners.  Most people think these pants are too loud, but I love them!  I liked how this long gold necklace from Forever 21 looks with the open collar.  

Then I just recently wore this shirt with a pair of dark wash jeans from Joe Fresh.  Now, most people consider the Canadian Tuxedo to be a big no-no.  But I think because the washes are so different, it is ok.  I wouldn't have worn a light wash denim pant.

I hope these three options gave you some ideas on how to wear a denim shirt. I love this addition to my wardrobe!

My Debt Solution Blogs

I am thrilled to finally announce that I am writing for another website!  My Debt Solution asked me to contribute some blog posts and I am having a ball writing for them!
