Wise Word Wednesday
I received this from my aunt and thought it was beautiful. It think it's a good reminder of the ying and yang of life:

Food Friday: Healthy Salad Dressing
As many of us are trying to eat better and find healthy
alternatives to our favourites, you might be disgusted to learn how many
calories we are wasting in salad dressing. Here we are, thinking that
eating salad is great! But if you douse your lettuce in a thick,
creamy, calorie-laden dressing, it's kind of counterproductive. :(
But, not to worry! My absolute favourite nutritionist Joy McCarthy, author of one of my favourite books Joyous Health
comes to the rescue! In the above photo you can see that I have been
making this dressing at home and just loving it. It's nice to know I am
adding healthy ingredients to a salad.

Here is Joy's recipe:
Creamy Dressing Ingredients
Yields approximately 2 cups of dressing.
- 2/3 cup raw (unsalted, unroasted) cashews (soak for an hour)
- 3/4 cup water
- 1/4 cup lemon juice
- 1 1/2 tsp Dijon mustard
- 3/4 tsp honey
- 1/2 tsp salt
- Fresh ground black pepper
Method: Discard water from soaked cashews. Place all
ingredients into a blender or food processor and pulse until creamy.
Enjoy as a veggie dip or salad dressing!
Tip: Add 2 garlic cloves and you’ve got a Caesar salad dressing.
YUM! Seriously so delicious and easy to make!
