This week I wanted to make a very simple dinner: salad and potatoes. I am slowly working towards a clean, vegetarian lifestyle and so more of my meals are reflecting this. I didn't want to just make oven fries (even though these are a favourite!) so I tried a new recipe from Deliciously Ella.
Her Perfect Roasted Potatoes lived up to the name! These were a hit with Jeremy and even Thomas! So I thought today I would share the recipe in case you are looking for something a little different than the usual potato.
(Serves 4)
Ingredients:
about 12 medium russet potatoes
olive oil
salt and pepper
12 sprigs of fresh thyme
12 sprigs of fresh rosemary
Directions:
Preheat the oven to 400 degrees
Peel potatoes and cut in half
Place potatoes in a saucepan of cold water and bring them to a boil
Once they have reached a boil, let them cook for a couple minutes before draining
Place potatoes on a baking sheet with a generous amount of olive oil, salt and pepper and place the herbs on top.
Leave them to cook for about an hour, turning once or twice.
